Slice halloumi into stick shapes. Prepare 3 shallow bowls, one with eggs, one with flour and one with a combination of the everything but the bagel seasoning and breadcrumbs. Whisk the eggs.
Coat each halloumi stick in flour, then whisked eggs, then breadcrumb mixture. Pour fry oil into a large deep skillet. You’ll want enough oil to mostly submerge your halloumi. When oil reached 325, add halloumi fries, about 3 at a time (depending how big your skillet is). Cook for about 2-3 min per side or until nicely golden brown. Transfer to a plate or cooling tray.
On low, melt butter in a small skillet. Add honey and sriracha and stir until smooth and combined. Serve with halloumi and enjoy!
