These spicy steak salad boats are an easy lunch or dinner idea!

The Deets
Colorful and delicious dinner (or lunch) idea for you: spicy steak salad boats with a fried noodle slaw and a Thai-inspired peanut sauce. I used European Beef from Ireland for the protein in this because their hanger steaks are such high quality, and so so tender. There’s several steps involved with this meal but to start, you’re going to marinate your beef in a plastic bag for at least 2 hours or overnight. The more you marinate the more flavor it’ll get! One of my favorite parts of this recipe is the peanut sauce. My secret ingredient for the peanut sauce is actually balsamic vinegar… it adds such rich flavor to the sauce and pairs really well with the peanuts. Once you’re ready to cook your steaks, do so until your desired temp (I cooked mine medium rare, so it’s about 3-4 minutes each side). Then you’ll assemble your boats, which is the fun part! You’ll add your coleslaw, and steak to the cabbage boat and top with peanut sauce! Finish everything off with a little sriracha, peanut sauce and whatever other toppings you like! Instructions
- Make your marinade by combining all ingredients in a bowl. Whisk until smooth and combined. Wash meat and pat dry. Add meat to a plastic bag and pour over marinade. Let marinate for at least 2 hours or overnight.
- Make peanut sauce by combining ingredients in a bowl. Whisk until smooth and creamy. Add coleslaw mix, cilantro, fried noodles (if using), radish and shaved carrots to a bowl. Add a few tbsp of the peanut sauce over top and mix to combine.
- Remove steak from marinade and pat dry. Season with pepper. You might need to slice steak in half lengthwise as the pieces are long for a pan. Add a little oil to a pan and then add your steak. Cook for about 3-4 min per side for medium rare. Set aside and let rest. Slice
- Prep any toppings you like and slice cabbage in half. Remove the core and pick off the large leaves for your cups. Add cabbage mixture to each cup and then top with a few slices of your steak. Add any toppings you like and drizzle everything with peanut sauce. Enjoy
