This is my quick and easy go-to breakfast when cooking for a group. Meet the pesto & goat cheese breakfast bake.

Meet your new favorite breakfast bake: flaky puff pastry loaded with pesto, creamy goat cheese, and parmesan, all topped with a perfectly cooked egg and a crust coated in Everything But The Bagel seasoning. It’s simple, delicious, and perfect for a weekend morning when you want something that feels a little fancy but is super easy to make.
This one comes together so fast, which makes it ideal for a lazy morning or even a last-minute brunch. I used homemade pesto for mine because I love the fresh flavor, but honestly, store-bought works just as well. The combo of buttery puff pastry, tangy goat cheese, and rich parmesan is so good, and that golden egg on top is the cherry on, well, everything.

Here’s how to make it:
Pesto & goat cheese breakfast bake
Ingredients
- A few tbsps goat cheese
- 3/4 cup grated parm
- 1 egg (2 depending on how big)
- Cherry tomatoes
- Flaky sea salt/pepper
The pesto:
- 3/4 cup basil leaves
- 3/4 cup olive oil
- 2 garlic cloves
- 1/2 cup parm cheese
- Salt/pepper
- 1/4 cup pine nuts
Instructions
- Preheat oven to 400. Lay out puff pastry on parchment paper and lightly score the sides with a fork. Brush egg wash over crust and then top with everything bagel seasoning.
- Make your pesto: In a food processor, combine mint, basil, olive oil, garlic, pine nuts, parm cheese, salt and pepper. Blend until combined. Taste and adjust accordingly. Spread on the middle of your puff pastry. Add d little dots of goat cheese and more parm. Par bake for 10 min.
- Remove and crack an egg on top. The egg ran a bit, so if you want to contain them you can build little walls with the cheese.I didn’t mind the eggs being overtop so its a personal preference. Add cherry tomatoes. Bake again for another 7 min or until eggs cooked.
- Remove and enjoy!
