I saw fresh mangos in the market which made me super excited for spring and summer veggies. This one has a lot of different flavors: mango ricotta toasts with crushed cashews and coconut flakes 🤩 it’s a great combo of salty/sweet. Enjoy 💙
Mango ricotta toast with crushed cashews and coconut flakes
- Bread of choice (this is a sourdough)
- Fresh sliced mango
- Coconut flakes
- Ricotta cheese
- Cashews, crushed
- Flaky salt
- Good olive oil
- Coat bread in olive oil and cook in a skillet for about 2-3 per side.
- Slice mango. See video for easiest way to do it.Essentially cut a piece of the mango and using a knife, crosshatch into the mango and then scoop out with a spoon.
- Add ricotta, mango, coconut flakes, cashews and olive oil.Season with flaky sea salt. Enjoy 💙
