Mango ricotta toast with crushed cashews and coconut flakes

Ingredients

  • Bread of choice (this is a sourdough)
  • Fresh sliced mango
  • Coconut flakes
  • Ricotta cheese
  • Cashews, crushed
  • Flaky salt
  • Good olive oil

Instructions

  • Coat bread in olive oil and cook in a skillet for about 2-3 per side.
  • Slice mango. See video for easiest way to do it.Essentially cut a piece of the mango and using a knife, crosshatch into the mango and then scoop out with a spoon.
  • Add ricotta, mango, coconut flakes, cashews and olive oil.Season with flaky sea salt. Enjoy 💙
