Making homemade hashbrowns is much easier than think, you’re going to make these on repeat!

I recently discovered just how simple and satisfying it is to make hashbrowns at home, and the best part is, that you likely already have most of the ingredients you need right in your kitchen. These homemade hashbrowns turn out perfectly crispy and golden, making them a fantastic addition to toast, sandwiches, or even as a standalone snack. The process is straightforward and so worth it.

Start by grating some potatoes—you can use a box grater or a food processor with a grating attachment. Use a cheesecloth, a clean kitchen towel, or, if you’re like me and don’t have a cheesecloth handy, a cloth napkin will work just fine. Wrap the potatoes up in the cloth, then press or twist to squeeze out all the water—you’ll be surprised how much liquid comes out! The drier the potatoes, the crispier the hashbrowns. Once you’ve prepped the potatoes, you’re ready to cook them to crispy perfection. It’s such a simple process, but the results are incredibly satisfying and a great way to elevate your breakfast or brunch game. Let me know what you think in the comments! Servings 6 patties

Ingredients

  • 2 russet potatoes
  • 1/4 cup parmesan cheese, grated
  • 2 scallions, roughly chopped
  • 1 egg
  • 2 tbsp flour
  • Vegetable oil

Optional toppings:

  • 2 tbsp chopped scallions
  • Sour cream to your liking

Instructions

  • Grate potatoes. Rinse potatoes in a strainer a few times to release some starch. Then with a cheesecloth or towel, press down and remove as much water from the potatoes as possible. I didn't have a cheesecloth so used an extra cloth napkin and it worked fine.
    Optional: you can peel your potato skin or not, depending on preference. I peeled a little off but kept most on… totally a personal preference.
  • Make your mixture: in a bowl, add egg, scallions, flour and parmesan cheese. Stir until combined and then add potatoes. Season with salt and pepper.
  • Once fully combined, use your hands to create thin patties. Meanwhile, start heating about 1/4 inch vegetable oil in a skillet. Once that’s really hot, add patties to the skillet and cook about 3min per side.
  • Remove and add your favorite toppings. Enjoy!
