Easy and oh so tasty toast idea that is sure to be your next lunch or breakfast fixation.

The Deets:
I promise this will become you next breakfast favorite: garlicky spinach on toast with creme fraîche and topped with a chili crisp poached egg. This is easy, full of greens and packed with protien.

Garlicky Greens on Toast with a Chili Poached Egg
Ingredients
- Bread of choice This is sourdough
- 3 Cloves of garlic
- 3 cups Spinach
- 1 tbsp Crema fraiche
- 1 tsp Chili crisp This is Momofuku
- A squeeze of lemon
- 1 Egg
- Sea salt
- Pepper
Instructions
- Bring a medium pot of water to a boil. Using a spoon, stir water into a tornado and drop your egg in carefully. I sometimes will crack my egg into a small bowl first so it goes in more smoothly. Stir was and let it come back to a boil. Remove egg with a slotted spoon about about 2-3 min (depending on how cooked you want your egg)
- Peel garlic and thinly slice. Add oil to a pan and then add garlic. As garlic starts to cook, add in spinach.
- As spinach starts to wilt, add in chili crisp and season with salt and pepper. If you wanted to fry and egg, you could then cook your egg right on top of the spinach. Otherwise, cook until spinach is done and remove from heat.
- Coat bread in olive oil and cook for 2-3 min per side. Add creme fraiche.
- Top with spinach, poached egg and more chili crisp. Season with a little a little squeeze of lemon. Enjoy!

You could fry or poach your egg depending on preference. Either would be delicious!
