Instead of traditional croutons, I went with a side of crispy fries for that extra salty, satisfying crunch. To elevate the flavors even more, I added a burst of freshness with a homemade tomato and red onion vinaigrette, which adds a slightly tangy, savory kick to every bite. Ingredients

The chicken cutlets:

  • Thinly sliced chicken breasts
  • All purpose flour
  • Sea salt
  • Pepper
  • Panko breadcrumbs
  • 2 eggs whisked
  • Fry oil

The creamy caesar:

  • Thinly chopped romaine
  • 1 egg yolk
  • 1 tbsp capers
  • 1 garlic clove minced
  • 1 tbsp pepperoncinis diced
  • 1 cup greek yogurt or mayo
  • A squeeze of lemon
  • 1 tbsp dijon mustard
  • A nice glug of good olive oil

The rest:

  • Cherry tomatoes
  • Thinly sliced red onion
  • Olive oil or Brightland pizza oil
  • Italian seasoning
  • French fries
  • Ciabata roll
  • Handful of grated parm
  • Handful of grated mozzarella

Instructions

  • Thinly slice onions and add water to a small bowl. This will mellow them out.
  • Make caesar dressing by combining all ingredients except for the olive oil in a bowl. Slowly whisk in olive oil. Season to taste. Add in chopped romaine and mix until creamy and combined.
  • Add fry oil to a deep pan and let heat to about 350. Add salt and pepper to your flour. Dredge chicken in flour, then egg then breadcrumbs. Add each piece of chicken to fry oil and cook for about 3 min per side or until golden brown. Remove and transfer to a paper towel lined plate.
  • Add frozen fried into oil and cook for a few min until browned.
  • Drain water from onions and add to a bowl with diced cherry tomatoes. Drizzle with a little olive oil and sprinkle with Italian seasoning.
  • Melt parm and mozzarella on a slice of ciabatta bread and then assemble your sandwich: Add a chicken cutlet, followed by a scoop of caesar, then tomato mix and top with a few fries. Enjoy!
