Cottage Cheese Breakfast Bowl with Caramelized Bananas
Ingredients
The cottage cheese base:
- 1 cup Cottage Cheese
- 1/8 cup Maple syrup or honey More if you want it sweeter
- Dusting of cinnamon
The bananas:
- 2 bananas
- 3 tsp butter
- 1 tbsp brown sugar
- 1 tsp cinnamon
Instructions
- Prepare the bananas: Melt butter in a pan and peel bananas. Slice bananas in half lengthwise and widthwise. Once butter is melted, add banana slices and top with brown sugar and cinnamon. Cook on medium to low heat, moving around with a spatula to keep them from sticking. Gently flip the bananas and cook for another minute on the other side until bananas are softened and golden brown. Transfer to parchment paper.
- Combine honey/maple syrup, cottage cheese and cinnamon in a bowl.
- Add bananas and spoon over a little of that cinnamon butter overtop. Sprinkle with oats and slivered almonds. Enjoy!
