The Deets:

Here’s a mouthwatering idea for your next lunch: a caramelized onion and goat cheese sandwich, paired with sautéed baby portobello mushrooms for a rich, earthy flavor. This combination of ingredients creates a sandwich that’s both simple to make and bursting with deliciousness, making it a perfect go-to for your midday meal. I used a hearty sourdough bread to hold everything together, which added just the right amount of crunch and structure. But feel free to use any type of bread that you enjoy! The goat cheese makes for a perfect spread to keep the veggies together.

To elevate the baby portobello mushrooms, I marinated them in a splash of red wine before sautéing—this added a depth of flavor that complements the creamy goat cheese and sweet caramelized onions beautifully. This veggie-forward sandwich is so satisfying. I can’t recommend it enough!

If you try making this, I’d love to hear how it turned out for you. Let me know in the comments! And if you’re looking for even more sandwich inspiration, check out my other ideas for creative lunches here.
