Buttery mushroom and & goat cheese breakfast croissant

One of my favorite combos is goat cheese and mushrooms. This breakfast croissant takes that classic duo to a whole new level, incorporating shiitake mushrooms for extra depth of flavor and a beautifully layered experience. The mushrooms are sautéed to perfection in butter and fresh thyme, which brings out their rich, umami essence while adding an aromatic, herbal note that makes each bite truly unforgettable. Once the mushrooms are perfectly golden, they’re gently folded into soft, creamy scrambled eggs, creating a silky texture that balances the tangy, creamy goat cheese.

Buttery mushroom & goat cheese breakfast croissant

Ingredients

  • 1 Croissant
  • 1 cup Shiitake or mushrooms of choice
  • A few sprigs of thyme
  • 2 tbsp Butter
  • 2 Eggs
  • Balsamic glaze
  • 1 tbsp Goat cheese

Instructions

  • Clean mushrooms and add to the skillet. Season with salt and pepper. Let them brown and release some liquid. After about 5 min, add butter and thyme to the skillet. Cook until mushrooms are tender, about another 5 min or so. Transfer to a plate.
  • Wipe out pan and add butter on medium heat. Whisk 2 eggs and then pour into the pan. Let the eggs cover the whole bottom of the pan in an even layer. Let them sit for about a minute on low heat.
  • Add cooked mushrooms and goat cheese. Fold eggs on each side making a little package for the goat cheese to cook with the mushrooms.
  • Slice croissant and toast (or cook in a pan with some butter). Add eggs and drizzle with balsamic glaze. Enjoy!
