This Brown Butter Lobster Grilled Cheese on soft buttery brioche has all the best things about a lobster roll, but turned into a grilled cheesy melt.

This Brown Butter Lobster Grilled Cheese takes all the magic of a lobster roll and layers it into a golden, melty masterpiece. Sweet chunks of lobster are tossed in nutty brown butter, which deepens their flavor and gives every bite a rich, toasty edge. Add in creamy Havarti cheese, known for its smooth melt and gentle tang, and you’ve got the perfect balance of indulgence and comfort, pressed between two slices of crispy, golden bread.
To make it even better, a chive garlic aioli ties everything together with a fresh, garlicky bite that cuts through the richness while adding a touch of brightness. This sandwich is buttery, cheesy, and packed with lobster flavor—the best parts of a lobster roll reimagined as the ultimate toasted melt. It’s the kind of grilled cheese that feels elegant yet cozy, indulgent yet approachable, and absolutely unforgettable.
