Apple Pie Cottage Cheese Breakfast Bowl

This Apple Pie Cottage Cheese Breakfast Bowl with honey butter apples is a quick, protein packed, cozy way to start the day.

Ingredients

Serves 1 bowl

The cottage cheese base:

  • 1 cup cottage Cheese
  • 1/8 cup maple syrup or honey
  • Dusting of cinnamon 

The apples:

  • 1 honeycrisp apple
  • 2 tbsp butter
  • 1 tbsp hot honey 

The rest:

  • 1/3 cup chopped pecans (or nut of choice)
  • Granola of choice 

Instructions 

  • Prepare the apples: Melt butter and hot honey in a pan. Slice apples and add to pan. Cook on medium heat until apples soften, about 2-3 min. Careful to not leave them cooking for too long, you don’t want them to get too mushy.
  • Combine maple syrup, cottage cheese and cinnamon in a bowl. 
  • Add apples and spoon over a little of that honey butter overtop. Sprinkle with granola and chopped pecans. Enjoy!
