Inspired by the crispy, creamy goodness of crab Rangoon, this melt layers a luscious, spicy crab filling between buttery slices of brioche, all held together by an irresistible amount of melty cheese. You’re left with a golden, crispy, flavor-packed sandwich that’s both decadent and satisfying.

The crab salad is made with some scallions, whipped cream cheese, Worcester sauce, soy sauce, sriracha, and kewpie mayo. I love serving it with a side of sweet chili sauce for that perfect balance of sweet heat, but honestly, it’s so good that it doesn’t even need a dip. The brioche bread really takes this up a notch, but feel free to use a bread of your choice! Whether you’re making it for a special lunch or a cozy dinner, this melt is guaranteed to impress.

Spicy Crab Rangoon Melt

This Spicy Crab Rangoon Melt takes everything you love about the classic appetizer—creamy crab filling, savory seasoning, and a hint of sweetness—and turns it into a golden, gooey, irresistible sandwich.

Ingredients

The crab salad:

  • 5 oz Lump crab meat 
  • 2 Scallions sliced
  • 3 tbsp Whipped or regular cream cheese
  • 1 tsp Worcestershire sauce 
  • 1 tbsp Soy sauce 
  • 1 tsp Sriracha 
  • 1 1/2 tbsp Kewpie mayo
  • Furikake for topping
  • 1 tsp Sweet chili sauce

The rest:

  • Brioche bread (or whatever bread you prefer)
  • Mozzarella cheese
  • Red pepper flakes 
  • Salt
  • Pepper
  • Red pepper flakes
  • Butter for melting 

Instructions 

  • Preheat oven to broil. Combine salad ingredients into a bowl until combined. Season to taste. You might want to adjust depending on how creamy or spicy you want it to be.
  • Add melted mozzarella cheese to two slices of brioche bread. Add to a baking sheet and broil for about 2-3 min or until cheese has melted and browned slightly. Add scoops of crab salad to the sandwich and close.
  • Melt butter in a skillet and add your melt. Cook on medium to low heat with a top until the other side of the bread is browned and cheese and crab salad have melted together. Enjoy!
