This is the sandwich you make when you’re craving a cheesy, griddled melt but want to take things up a notch. Meet my Spicy Crab Rangoon Melt—a rich, indulgent twist on the classic comfort food that brings together some of my absolute favorite flavors. Inspired by the crispy, creamy goodness of crab Rangoon, this melt layers a luscious, spicy crab filling between buttery slices of brioche, all held together by an irresistible amount of melty cheese. You’re left with a golden, crispy, flavor-packed sandwich that’s both decadent and satisfying. The crab salad is made with some scallions, whipped cream cheese, Worcester sauce, soy sauce, sriracha, and kewpie mayo. I love serving it with a side of sweet chili sauce for that perfect balance of sweet heat, but honestly, it’s so good that it doesn’t even need a dip. The brioche bread really takes this up a notch, but feel free to use a bread of your choice! Whether you’re making it for a special lunch or a cozy dinner, this melt is guaranteed to impress. Spicy Crab Rangoon Melt

Ingredients

The crab salad:

  • 5 oz Lump crab meat 
  • 2 Scallions sliced
  • 3 tbsp Whipped or regular cream cheese
  • 1 tsp Worcestershire sauce 
  • 1 tbsp Soy sauce 
  • 1 tsp Sriracha 
  • 1 1/2 tbsp Kewpie mayo
  • Furikake for topping
  • 1 tsp Sweet chili sauce

The rest:

  • Brioche bread (or whatever bread you prefer)
  • Mozzarella cheese
  • Red pepper flakes 
  • Salt
  • Pepper
  • Red pepper flakes
  • Butter for melting 

Instructions 

  • Preheat oven to broil. Combine salad ingredients into a bowl until combined. Season to taste. You might want to adjust depending on how creamy or spicy you want it to be.
  • Add melted mozzarella cheese to two slices of brioche bread. Add to a baking sheet and broil for about 2-3 min or until cheese has melted and browned slightly. Add scoops of crab salad to the sandwich and close.
  • Melt butter in a skillet and add your melt. Cook on medium to low heat with a top until the other side of the bread is browned and cheese and crab salad have melted together. Enjoy!
