For the best results, I highly recommend using Trader Joe’s Caramelized Onion Cheddar – it melts beautifully in the center of each sausage patty and adds an irresistible flavor depth that pairs perfectly with the savory sausage. Each taco comes together with a melty, cheesy bite that’s balanced by the caramelized onions’ subtle sweetness. But the process is almost as fun as the final product.
Start by cooking up an egg to your liking – whether that’s soft and runny or more set, it’ll be the perfect topper. Now here’s the fun part: grab a warm tortilla to make the breakfast taco and spread a layer of sausage on one side. Once that’s ready, place it sausage-side down onto a hot pan and use a press (or the back of a spatula) to flatten it down. Caramelized onion & cheddar smashed sausage breakfast taco
Ingredients
- 1 medium tortilla
- 2 eggs
- A few slices of cheddar cheese ideally with Trader Joes caramelized onion cheddar
- 1 shallot or onion
- 2 tbsp butter
- 1 sausage link – I did hot sausage
- Sea salt
- Pepper
Instructions
- Thinly slice onion or shallot and add to a pan with olive oil, salt and pepper. Cook stirring often for about 20 min or until onion has softened and browned. Remove from pan.
- Remove sausage from casing and push into tortilla in a thin even layer. You dont want this to get too thick as you want it to cook all the way through
- Add butter to same pan add sausage tortilla face down. Cook for about 5 min or until sausage is nicely brown and then flip and cook for about 5 min on medium / low heat.
- Remove from pan and wipe pan clean. Melt butter in pan and whisk 2 eggs in a bowl. Pour into pan in an even layer. Add onions and cheddar to the center, then fold each of the sides. This will help the cheddar melt.
- Add to the center of the tortilla and fold over. Slice in half and enjoy!
