This spring pea toast with lemony burrata is the perfect spring lunch!

The Deets
Farmers market fridge clean up: Spring pea, scallion and asparagus toast with lemony burrata. I found myself with a bunch of veggies that needed to be eaten, so I decided to turn them into a little spring toas This is super easy and perfect if you don’t have a lot of time for lunch! I truly enjoy the process of cleaning out my fridge and seeing what I can put together. This toast is full of green veggies, so it’s a perfect healthy lunch option. I used sourdough like this one as the base which in my opinion is the best bread for this type of toast! I layered a lemony burrata on the toast and sprinkled the vibrant veggies on top, creating a burst of freshness and flavor in every bite. For an even heartier option, you can add a poached or fried egg on top, or even some crispy bacon or smoked salmon. Get creative with your toppings and make it your own!
