This spring pea toast with lemony burrata is the perfect spring lunch!

Farmers market fridge clean up: Spring pea, scallion and asparagus toast with lemony burrata. I found myself with a bunch of veggies that needed to be eaten, so I decided to turn them into a little spring toas This is super easy and perfect if you don’t have a lot of time for lunch! I truly enjoy the process of cleaning out my fridge and seeing what I can put together. This toast is full of green veggies, so it’s a perfect healthy lunch option. I used sourdough like this one as the base which in my opinion is the best bread for this type of toast! I layered a lemony burrata on the toast and sprinkled the vibrant veggies on top, creating a burst of freshness and flavor in every bite. For an even heartier option, you can add a poached or fried egg on top, or even some crispy bacon or smoked salmon. Get creative with your toppings and make it your own! Here’s how to make it:

Spring pea, scallion and asparagus toast with lemony burrata

Ingredients

  • Burrata cheese
  • Bread of choice this is a sourdough
  • Sea salt & Pepper
  • 2 tbsp spring peas
  • A few stalks of asparagus
  • 2 green onions
  • Juice from half a lemon
  • Olive oil

Instructions

  • Using a veggie slicer, peel asparagus into ribbons. Slice green onion wash peas. Add olive oil to a pan and add veggies. Season with sea salt, pepper and a squeeze of lemon. Cook for about 2-3 min until still bright green but tender.
  • Remove and set aside. Coat bread in olive oil and add to pan. Cook for 2-3 min per side or until brown.
  • Add burrata to toast and season with salt, pepper and lemon juice. Add veggies and season to taste. Enjoy!
