This Spring Pea, Burrata, Scallion and Asparagus Toast is the perfect spring lunch!

Spring Pea, Burrata, Scallion, and Asparagus Toast is a fresh, vibrant dish that captures the essence of the season. Creamy burrata is spread over crisp, toasted bread and topped with sweet spring peas, lightly charred scallions, and tender asparagus spears. This toast is both nourishing and elegant, making it perfect for a spring brunch or light lunch. Spring Pea, Burrata, Scallion and Asparagus Toast

Ingredients

  • Burrata cheese
  • Bread of choice this is a sourdough
  • Sea salt & Pepper
  • 2 tbsp spring peas
  • A few stalks of asparagus
  • 2 green onions
  • Juice from half a lemon
  • Olive oil

Instructions 

  • Using a veggie slicer, peel asparagus into ribbons. Slice green onion wash peas. Add olive oil to a pan and add veggies. Season with sea salt, pepper and a squeeze of lemon. Cook for about 2-3 min until still bright green but tender.
  • Remove and set aside. Coat bread in olive oil and add to pan. Cook for 2-3 min per side or until brown.
  • Add burrata to toast and season with salt, pepper and lemon juice. Add veggies and season to taste. Enjoy!
