I recently got my hands on some freshly caught tuna, and I just had to make these delicious mango & tuna jalapeño summer rolls! These are the perfect light and refreshing snack or meal for warmer weather, and they’re incredibly fun to make. The best part about summer rolls is that they’re a bit of a “choose your own adventure” dish—you can get creative with both the fruits and veggies you add, as well as the protein. This time, I decided to keep things fresh and vibrant by combining the tuna with creamy avocado, spicy jalapeño, thinly sliced red onion, a sprinkle of furikake seasoning, and a touch of cilantro and lime for extra flavor. The combination of fresh ingredients creates a burst of flavors in every bite, making these rolls both satisfying and healthy.

Making summer rolls is surprisingly easy once you get the hang of working with the rice paper wraps. You can find them in most grocery stores, and they’re super versatile. To start, soak the rice paper in warm water for a few seconds until it softens. Then, layer your fillings—starting with the fresh tuna, followed by slices of mango, avocado, and jalapeño. The mango adds a subtle sweetness that pairs beautifully with the savory tuna, while the avocado adds a creamy richness, and the jalapeño brings a nice kick of heat. Red onion adds crunch, and a sprinkle of furikake (a Japanese seasoning made with dried seaweed and sesame seeds) gives the rolls an umami boost. Add a touch of cilantro and a squeeze of lime to brighten up the flavors.

Once everything is in place, carefully roll them up, tucking in the sides as you go. For dipping, I like to keep it simple with soy sauce, but feel free to add a dash of sriracha or make a peanut sauce for a richer flavor. Finally, sprinkle some sesame seeds on top for a bit of extra texture and presentation. These summer rolls are not only delicious but also versatile—swap out the tuna for shrimp, tofu, or even chicken if you prefer. Ingredients

  • Spring roll wrappers
  • Fresh tuna
  • Yellow mango
  • Avocado
  • Lime
  • Jalapeño, thinly sliced
  • Red onion
  • Furikake
  • Sesame seeds

Instructions 

  • The proportions on this are dependent on how many you want to make, but I would suggest slicing all your veggies/fruit and fish into strips. Each roll takes about 1 slice of each.
  • Dip your rice paper in water and assemble each roll with a little handful of each ingredient. Careful not to overstuff. Fold and roll! (I watched a YouTube video for how to roll which was helpful). Top with sesame seeds and dip in soy sauce, sweet chili sauce or another sauce of choice. Enjoy!
