This Smoked Salmon Egg Sandwich is rich, creamy, and full of fresh flavor. It’s layered with smoked salmon and a pickly, veggie cream cheese spread mixed with radish, scallion, lemon, and dill for brightness and crunch. Every bite has that perfect balance of savory and fresh especially if you are a fan of smoked salmon. My goto for smoked salmon is Acme.

Smoked Salmon Egg Sandwich

This Smoked Salmon Egg Sandwich with a pickly veggie cream cheese, layers of smoked salmon, and fluffy eggs is the ultimate breakfast sandwich.

Ingredients

Serves 2 sandwiches
  • 8 oz Smoked Salmon
  • Handful of arugula
  • A few slices of red onion 
  • 2 bagels

The cream cheese:

  • 4 oz whipped or regular cream cheese
  • 2 radishes, diced
  • 1 scallion, chopped
  • Squeeze of lemon
  • Handful of dill 
  • Sea salt
  • Pepper

The omelette:

  • 2 eggs
  • 1 tbsp capers
  • 1 tbsp whipped or regular cream cheese
  • 1 tsp dill
  • 1 tbsp butter

Instructions 

  • Slice and toast bagel.
  • Make cream cheese: chopping fillings and combining in a bowl. Season to taste. 
  • Make the omelette: Whisk 2 eggs and then pour into the pan. Let the eggs cover the whole bottom of the pan in an even layer. Let them sit for about a minute on low heat.
  • Add capers a small scoop of cream cheese and dill. Fold eggs on each side making a little package for the cream cheese so it gets a little melty. 
  • Assembly: Add cream cheese to bagel along with layers of smoked salmon, and the omelette. Top with arugula and red onion. Enjoy!
