Preheat oven to 400. Drizzle some olive oil in a pan and thinly slice onions. Add onions to a pan along with a pinch of salt and pepper. Cook, stirring often for about 20-30 minutes. If the pan starts to get dry, add chicken stock or water and continue to cook until the potatoes cook down and become browned and caramelized.
Thinly slice potatoes and coat in a nice glug of good olive oil. season with salt pepper and garlic powder.
Overlapping the potatoes lay them on parchment paper in rows of 4 or 5. I did 6 rows but you can do whatever you want. Generously sprinkle with shredded cheese and add spoonfuls of the onions throughout. Bake for about 25 min or until browned, golden and cheese is bubbling.
Once potatoes have cooled slightly, fill one side with whatever fixings you want. I did a coat of dijon mustard, a few slices of turkey, a handful of arugula and a few more spoonfuls of caramelized onions. Fold sandwich over and slice. Enjoy!
