Spicy Tuna Salad Sandwich

This Spicy Tuna Salad Sandwich combines all the classic staples of tuna salad but with a sriracha mayo and banana peppers for a spicy and pickly twist.

Ingredients

Serves 2 sandwiches

The tuna salad:

  • 1 can of Albacore tuna I like to use Fishwife
  • 2 tbsp Greek yogurt see note
  • 1 scallion, chopped
  • 2 celery stocks, chopped
  • 1 tbsp mayo
  • 1 tsp sriracha
  • 1 tbsp banana peppers, chopped

The rest:

  • Handful of arugula
  • 2 slices of brioche bread

Instructions 

  • Prep ingredients by chopping scallion, celery and banana peppers.
  • Combine tuna salad ingredients into a bowl until creamy. Season to taste. You might want to adjust depending on how creamy or spicy you want it to be.
  • Toast brioche bread and add scoops of the spicy tuna salad to the middle. Top with arugula. Enjoy!

Notes

Note: You can substitute sour cream for Greek yogurt depending on your preference. 
Note: I like to add a squeeze of lemon to the arugula for a little added flavor. This is optional
