Instructions
If adding tofu, follow steps 1-2. If not, skip to step 4. Press the tofu: Press the tofu by wrapping it in paper towels (or a clean dry tea towel). Place a plate or pan on top of the wrapped tofu, and put a couple of heavy books or cast iron pan on top of that. Let the tofu press for 30 minutes to an hour. Then cube tofu.
Heat a large non-stick pan over medium-high heat. Add the olive oil so it coats the pan. Once the oil is hot, add the tofu in a single layer. Let the tofu brown on all sides, it should be a nice golden color. Use a fork to gently flip each piece over. Transfer to a paper towel lined baking sheet.
Make peanut sauce by combining peanut butter, minced garlic, honey, soy scallion sauce, balsamic vinegar and chili crisp in a small sauce pan. Heat on low for 3-5 min until sauce is combined. You might need to add a few tbsp of water if the sauce seems too thick. Season to taste and add more chili crisp if you want more heat.
Cook noodles according to package. Add a few tbsp of the sauce to a bowl and add tofu. Top with the noodles and mix until combined. Top noodles with chopped scallions and peanuts. Finish with a drizzle of chili crisp. Enjoy!
