Sourdough toast with scrambled eggs, smoked salmon and sliced avocado

Ingredients

  • Smoked salmon
  • 2 eggs
  • 1 tbsp butter
  • 1 tbsp half and half
  • Sea salt and pepper
  • Sourdough bread
  • Everything but the bagel seasoning
  • Avocado
  • Olive oil

Instructions

  • Crack 2 eggs in a bowl and add half and half.Whisk and season with salt and pepper.
  • On medium heat, add butter to a pan. When pan is hot and butter is melted, add eggs. Using a spoon or spatula, move eggs continuously so they don’t burn and cook until light and fluffy. Remove and add a drizzle of olive oil. Add bread to pan and cook for about 2-3 min per side. 
    Step 3: Add eggs to bread and then slice avocado and add as well. Add smoke salmon and everything but the bagel seasoning. Enjoy!
