Smoked salmon cottage cheese bagel dip

Ingredients

The cottage cheese dip:

  • 1 cup Breakstones Cottage Cheese
  • 1/3 cup Cream cheese
  • 1/3 cup Caramelized shallots (see below)
  • 2 Scallions
  • Zest of half a lemon
  • Juice of half a lemon
  • 2 tbsp Everything but the bagel seasoning

The toppings:

  • Smoked salmon 
  • More everything but the bagel seasoning 
  • Dill
  • Red onion
  • Capers
  • Pomegranate 

The caramelized shallots:

  • 3  Shallots, peeled and thinly sliced
  • 2 tbsp Butter
  • Salt
  • Pepper

Instructions 

  • Thinly slice shallots and add to a skillet with 2 tbsp butter, a pinch of salt and pepper. Cook stirring often on medium to low heat for about 15 min or until the shallots are cooked down and a deep brown.
  • Add all cottage cheese dip ingredients to a bowl and mix until creamy and combined.
  • Top with pieces of smoked salmon and whatever other toppings you like. Serve with bagel chips, crackers or actual bagels! Enjoy!
