Preheat oven to broil. Combine smoked salmon salad ingredients into a bowl until combined. Season to taste. You might want to adjust depending on how creamy you want it to be.
Add strips of bacon to a skillet and cook on medium / low heat until desired crispiness, about 7 minutes. Transfer to a paper towel lined plate.
Add shredded havarti cheese to two slices of brioche bread. Add to a baking sheet and broil for about 2-3 min or until cheese has melted and browned slightly. Add scoops of salmon salad to the sandwich.
Slice a tomato and add to the sandwich along with the bacon and a handful of arugula. Close sandwich and enjoy!
