Scallion Pancake Breakfast Wraps

Ingredients

  • 2 Scallion pancakes homemade or store bought. Check recipe details for recommendations for either
  • 2 Eggs
  • 1 cup Melty cheese Raclette, swiss, havarti etc
  • 3 Pieces of bacon
  • 2 Scallions
  • Sriracha
  • 2 tbsp Butter
  • 1 tbsp Neutral Oil

Instructions 

  • Whether you are using a store bought or homemade pancake, Add neutral oil to a skillet and cook pancakes one at a time on medium heat until golden brown. Remove from skillet and set aside.
  • In same skillet, add 3 slices of bacon and cook until desired crispiness, about 4 min per side or so. Transfer to a paper towel lined plate and wipe out the pan.
  • Whisk eggs in a bowl and grate cheese. Melt butter in same skillet over medium heat. Pour eggs into pan in an even layer. add a layer of grated cheese (about 1/3 of the cheese), sliced scallions and one of the scallion pancakes. Reduce heat to low and when eggs have set, flip the egg/pancake in the pan.
  • Add the rest of the cheese, the bacon and a drizzle of sriracha. Add the second pancake and cook on medium to low heat with a lid on until all the cheese has melted. Transfer to a plate and slice. Serve with Win Son Ginger Deluxe Sauce. Enjoy!
