Preheat oven to broil. Make pickly mayo by combining ingredients in a bowl. Season to taste.
Toast bread and add pickly mayo. Top with slices of deli turkey and then slices of provolone cheese. Transfer to oven and broil for about 2-3 minutes or until cheese is browned and bubbly.
Meanwhile, combine arugula, lemon juice, olive oil, flaky sea salt and pepper in a small bowl.
Slice pickle and add to melt along with arugula mix and red onion. Close sandwich and enjoy!
