Provolone Turkey Melt

This Provolone Turkey Melt with a pickly mayo is the crispy, crunchy sandwich you need to spice up your lunch routine.

Ingredients

Pickly mayo:

  • 3/4 cup mayo
  • 2 Deli pickles finely chopped
  • 1 tsp pickle juice

The rest:

  • 2 Slices sourdough bread
  • 3 Slices provolone cheese
  • 5 Slices deli turkey
  • 3/4 cup arugula
  • 1 tsp lemon juice
  • 1 tsp Olive oil
  • 1 Pickle
  • Flaky sea salt
  • Pepper
  • 1/4 cup sliced red onion

Instructions 

  • Preheat oven to broil. Make pickly mayo by combining ingredients in a bowl. Season to taste.
  • Toast bread and add pickly mayo. Top with slices of deli turkey and then slices of provolone cheese. Transfer to oven and broil for about 2-3 minutes or until cheese is browned and bubbly.
  • Meanwhile, combine arugula, lemon juice, olive oil, flaky sea salt and pepper in a small bowl.
  • Slice pickle and add to melt along with arugula mix and red onion. Close sandwich and enjoy!

Notes

Note: This makes extra garlic aioli. This aioli stores great in the fridge for up to 10 days
