Prosciutto wrapped tater tots

Ingredients

  • 8 oz Goat cheese, softened
  • 20 Tater tots
  • 8 Slices of prosciutto 
  • 2 tbsp Chopped chives + more for topping
  • 1 tbsp Whipped cream cheese
  • Balsamic glaze or Hot honey
  • Sea salt
  • Pepper

Instructions

  • Preheat oven to 425. Remove tots from freezer and let thaw slightly (enough to slice into).
  • Add goat cheese, cream cheese, chives, salt, pepper to a bowl. Mix until creamy and combined. Make a slice lengthwise into each tot, making sure to not cut through the tot to the other side. Add a small spoonful of the goat cheese mixture to the tot. 
  • Slice prosciutto into smaller pieces, about the length of the tot. Wrap around each goat cheese filled tot. Repeat with remaining tots and add to a baking sheet. Bake for about 20 min or until prosciutto and tots are crispy and the cheese is bubbly. 
  • Serve with chives, hot honey, balsamic glaze, or any other dressing you want. Enjoy!
