Make your pesto. In a food processor, add pesto ingredients and blend. Taste test and adjust accordingly.
Toast toll and add a few scoops of pesto in a skillet, leaving room on the other idk of the pan for the mortadella. Crack 2 eggs over top pesto and season with salt and pepper.
Add a few slices of mortadella to the other side of the pan. As they cook they will get smaller. Flip after about 4 min or when crispy. Continue to watch eggs and cook until desired
Turn heat down to low and top mortadella with cheese and cover. The cheese will melt onto the mortadella.
Spread pesto onto bread and add pesto eggs, cheesy mortadella and thats it! Enjoy!
