Pesto Eggs and Crispy Mortadella Sandwich

Ingredients

Pesto

  • 3/4 cup basil leaves
  • 3/4 cup olive oil
  • 2 garlic cloves
  • 1/2 cup parm cheese
  • Salt/pepper
  • 1/4 cup pistachios

The rest

  • 1 roll or bread of choice this would also be good on a bagel
  • A few slices of mortadella
  • 2 eggs
  • mozzerella cheese

Instructions 

  • Make your pesto. In a food processor, add pesto ingredients and blend. Taste test and adjust accordingly.
  • Toast toll and add a few scoops of pesto in a skillet, leaving room on the other idk of the pan for the mortadella. Crack 2 eggs over top pesto and season with salt and pepper.
  • Add a few slices of mortadella to the other side of the pan. As they cook they will get smaller. Flip after about 4 min or when crispy. Continue to watch eggs and cook until desired
  • Turn heat down to low and top mortadella with cheese and cover. The cheese will melt onto the mortadella.
  • Spread pesto onto bread and add pesto eggs, cheesy mortadella and thats it! Enjoy!
