Kale & Parmesan Eggs on toast

Ingredients

  • 1 Slice of sourdough bread
  • 2 Eggs
  • 1/4 cup Grated parmesan cheese
  • Red pepper flakes
  • 1/4 cup Kale
  • Extra virgin olive oil
  • Sea salt
  • Pepper
  • A squeeze of lemon

Instructions 

  • Remove stems from the kale and wash thoroughly. Drizzle with a little olive oil, lemon juice, salt and pepper. Massage kale and set aside.
  • Add grated parmesan cheese to a pan in a thin even layer. Crack 2 eggs over top and season with salt, pepper and red pepper flakes. Cook for 2-3 min for an over easy egg.
  • Remove from pan and coat sourdough slice in olive oil and cook for 2-3 min per side or until golden. Add parmesan kale eggs over top and serve with your favorite hot sauce. Enjoy!
