Halloumi and Broccolini Bowls with a Pickled Raisin Relish

Ingredients

The golden raisin- green olive relish 

  • 1/2 cup pickled golden raisins I pickled like I would any veggie- bring 1/2 cup vinegar, 1 tbsp sugar, 1/4 cup water to a boil. Once sugar is dissolved, pour over raisins in a mason jar.
  • 1 shallot sliced (you could also pickle these if you want a more mellow onion flavor)
  • 1 tsp capers
  • 3 tbsp sliced green olives
  • 1/2 cup olive oil
  • 1/4 cup hazelnuts chopped
  • Juice from the pickled raisins as needed
  • Pepper

The Rest:

  • 6 slices of halloumi
  • 1 clove garlic
  • 1 cup broccolini
  • Olive oil

Instructions

  • Make your relish- You can quick pickle the raisins, but ideally these should marinate for a few hours. Combine all ingredients in a bowl and stir to combine. Season to taste and add more pickled raisin juice as needed.
  • In a skillet add slices of halloumi. You don’t need oil here, the halloumi can cook without out. Cook about 2-3 min per side or until golden brown. Remove from pan and set aside.
  • Slice garlic and add olive oil and garlic to same pan. Wash broccolini and slice the larger pieces in half. Add to skillet and season with salt and pepper. Cook until tender and lightly but still bright green. You want a nice crunch. Assemble your bowl and top with relish. Enjoy!
