Grilled chorizo & potato breakfast tacos with an elote style sauce

Ingredients

Serves 8 tacos
  • 6 eggs
  • 3 chorizo sausages removed from casing
  • 1/2 cup frozen hashbrown or tot you break it up and cook with chorizo
  • 3 ears of corn
  • 8 tortillas

The elote crema:

  • 1/4 cup grilled corn
  • 4 tbsp sour cream
  • 1/4 cup Cotija cheese
  • 1 lime
  • A sprinkle of tajin

The rest:

  • Avocado
  • Cojita cheese
  • Cilantro
  • Lime
  • Radishes
