Cottage Cheese Toast with Smoked Salmon

This Smoked Salmon Cottage Cheese Toast is a bright and delicious, breakfast, snack or appetizer perfect for entertaining or assembling quickly for a meal with 10 ingredients on a busy weekday.

Ingredients

Serves 2 toasts
  • 1 cup cottage cheese
  • Half a lemon
  • 3 tbsp Olive oil 2 tbsp for cottage cheese and 2 for toasting bread
  • Salt
  • Pepper
  • 2 slices of sourdough bread
  • Fresh dill
  • Sliced scallions
  • Handful of arugula
  • 3/4 cup sliced cherry tomatoes
  • 6 slices of smoked salmon
  • a few slices of red onion
  • Everything bagel seasoning

Instructions 

  • Coat bread in olive oil and cook in a skillet for 2-3 min per side. Alterantively, you could simply pop in the toaster.
  • Add cottage cheese to a bowl and squeeze with lemon, a drizzle of olive oil, salt and pepper.
  • Spoon cottage cheese over toasted bread. Layer with sliced scallions and sprigs of dill.
  • Top with sliced cherry tomatoes, and a handful of arugula.
  • Add slices of smoked salmon, red onion and everything bagel seasoning. Give everything another squeeze of lemon. Enjoy!

Notes

Fridge (storage):
Store components separately for best texture. The lemony cottage cheese mixture can be kept in an airtight container in the fridge for up to 3–4 days. Pre-slice your tomatoes, red onion, and wash/dry arugula, storing each in separate containers. Smoked salmon should stay tightly wrapped and used within 2–3 days once opened. Avoid assembling the toast ahead of time, as the bread will get soggy.
Freezer:
This recipe isn’t freezer-friendly once assembled. Cottage cheese can become watery and grainy after freezing, and fresh toppings like arugula and tomatoes won’t hold up well. If needed, you can freeze the bread separately and toast it straight from frozen when ready to use.
Make Ahead:
You can absolutely prep this for easy assembly. Mix the cottage cheese with lemon, dill, and scallions up to a few days in advance. Slice your toppings and portion out the smoked salmon so everything is ready to go. When you’re ready to eat, just toast your bread and assemble—this keeps everything fresh while still making it feel effortless and quick.
