Slice baguette and coat with olive oil. Working in batches, cook for 2-3 min per side in a skillet until both sides of the crostinis are nicely browned.
Chop apple into small bite sized slices. Melt butter in a pan and add apples and hot honey. Cook until apples soften. Dust cinnamon overtop. Cook for another min or 2.
Add cheese to each crostini, and then top with buttery apples, including some of that browned butter. Top each with a few pomegranate seeds and enjoy!
