Preheat oven to broil.
Make marinated tomato/onions: Add sliced red onions to a bowl with the diced cherry tomatoes. Drizzle with a olive oil and sprinkle with Italian seasoning. Set aside while you make the rest.
Make caesar dressing: Combine all ingredients except for the olive oil in a bowl. Slowly whisk in olive oil. Season to taste. Add in chopped romaine and mix until creamy and combined.
Fry cutlets: Add fry oil to a deep pan and let heat to about 350. Add salt and pepper to your flour. Dredge chicken in flour, then egg then breadcrumbs. Add each piece of chicken to fry oil and cook for about 3 min per side or until golden brown. Remove and transfer to a paper towel lined plate.
Melt cheese for sandwich: Slice ciabatta loaf in half. Grate parm and mozzarella and sprinkle on both slices of the loaf. Transfer to a baking sheet and broil until the cheese is browned and bubbly
Assembly: Add a chicken cutlet, followed by a scoop of caesar, then tomato mix and top with a few fries. Enjoy!
