Chopped Caesar Crispy Chicken Sandwich

This Chopped Caesar Crispy Chicken Sandwich is the ultimate indulgent stack with all the classics: caesar, crispy cutlets and french fries.

Ingredients

The chicken cutlets:

  • 4 Thinly sliced chicken breasts
  • 1 cup All purpose flour
  • Sea salt
  • Pepper
  • 2 cups Panko breadcrumbs
  • 2 eggs whisked
  • Neutral oil for frying

The pickly caesar:

  • 2 cups Thinly chopped iceberg lettuce
  • 1 egg yolk
  • 1 tbsp capers
  • 1 garlic clove minced
  • 2 tbsp chopped pepperoncini peppers minced
  • 1 tbsp pepperoncini brine
  • 3/4 cup greek yogurt or mayo
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 2 tsp dijon mustard
  • 2 tbsp grated Parmesan cheese

The rest:

  • 3/4 cup cherry tomatoes
  • Thinly sliced red onion
  • 1 tbsp Olive oil or Brightland pizza oil
  • 1/2 tsp Italian seasoning
  • 1/2 cup grated parm
  • 1/2 cup grated mozzarella
  • Ciabatta loaf
  • French fries (See note)

Instructions

  • Preheat oven to broil.
  • Make marinated tomato/onions: Add sliced red onions to a bowl with the diced cherry tomatoes. Drizzle with a olive oil and sprinkle with Italian seasoning. Set aside while you make the rest.
  • Make caesar dressing: Combine all ingredients except for the olive oil in a bowl. Slowly whisk in olive oil. Season to taste. Add in chopped romaine and mix until creamy and combined.
  • Fry cutlets: Add fry oil to a deep pan and let heat to about 350. Add salt and pepper to your flour. Dredge chicken in flour, then egg then breadcrumbs. Add each piece of chicken to fry oil and cook for about 3 min per side or until golden brown. Remove and transfer to a paper towel lined plate.
  • Melt cheese for sandwich: Slice ciabatta loaf in half. Grate parm and mozzarella and sprinkle on both slices of the loaf. Transfer to a baking sheet and broil until the cheese is browned and bubbly
  • Assembly: Add a chicken cutlet, followed by a scoop of caesar, then tomato mix and top with a few fries. Enjoy!

Notes

Note: this is an optional add that takes this sandwich over the top. I just did baked frozen fries and added. I love this brand.
