4Slices of mozzarella
4Slices of jalapeño pepper jack
2cupsFlour
3Eggs
2cupsPanko breadcrumbs
Oil for frying
Marinara for dipping
Instructions
Peel and slice onions (about 1 cm wide). Separate into rings, pairing up rings that have one bigger one and one slightly smaller one. Place the smaller one in the center of the big one.
Slice cheese into strips and place in between the rings until the cheese completes the whole circle. Repeat with remaining rings and freeze for 1 hour.
Dredge each ring in flour, then eggs, then breadcrumbs, making sure they get a full coating of each.
Add oil to a deep pan and heat until the temp is 350. A few at a time, add onion rings to the oil. Cook about 2-3 min per side or until the shells get browned. Transfer to a paper towel lined plate or baking rack. Serve with marinara and that’s it! Enjoy!
