Thinly slice shallots and add to a skillet with butter, a pinch of salt, pepper and thyme sprigs. Cook stirring often on medium to low heat for about 20 min or until the shallots are cooked down and a deep brown. Drizzle with balsamic and remove any thyme stems.
Coat bread in olive oil and cook in a skillet for 2-3 min per side until nicely browned.
Slice cheese and apples. Add to toasts along with the caramelized shallots. Cut toasts into 3 pieces each.
Drizzle with more balsamic glaze and enjoy!
