If you are making your pesto from scratch blend pesto ingredients in a food processor and season to taste. You can also skip this step and use store bought pesto.
Add strips of bacon to a skillet and cook on medium heat for about 8-10 minutes, flipping halfway through. Once bacon reaches your desired crispiness, transfer to a paper towel lined plate.
Toast bagel and add a layer of pesto to both sides. Add slices of tomato and the strips of bacon, then a handful of arugula. Close sandwich and enjoy!
Optional sandwich adds: avocado, cheese or adding a fried egg.
