Preheat oven to 400. Add pepper jelly to the top of one of the cheeses and then add the other cheese on top, making a sandwich. Drizzle hot honey overtop.
Unfold the pastry sheet on a lightly floured surface. Slice 1/3 off of the sheet and set aside. Place the cheese in the center of the puff pastry. Fold the pastry up over the cheese to cover.
Whisk egg and a tbsp of water in a small bow. Brush bottom of puff pastry, and place on a baking sheet. Using the puff pastry trimmings, create a bow or other decorations (this is optional). Brush the rest of the puff pastry with egg wash.
Bake for 25 minutes or until the pastry is golden brown. Let stand for 15 minutes before serving. Serve with whatever else you want: crackers, fruit, bread, meats, nuts etc. Enjoy!
