Baked Double Cream and Goat Cheese with Pepper Jelly

Ingredients

  • 1 sheet of thawed Pepperidge farm puff pastry with 1/3 trimmed off depending on how large your cheese are
  • 1 wedge of Cana de cabra goat cheese found at Whole Foods
  • 1 wedge of triple cream cows milk cheese this is Red Hawk from Cowgirl creamery- found at Whole Foods
  • 1-2 tbsp Pepper jelly
  • 1 tbsp hot honey
  • 1 egg
  • Whatever else you want on your cheese board

Instructions

  • Preheat oven to 400. Add pepper jelly to the top of one of the cheeses and then add the other cheese on top, making a sandwich. Drizzle hot honey overtop.
  • Unfold the pastry sheet on a lightly floured surface. Slice 1/3 off of the sheet and set aside. Place the cheese in the center of the puff pastry. Fold the pastry up over the cheese to cover.
  • Whisk egg and a tbsp of water in a small bow. Brush bottom of puff pastry, and place on a baking sheet. Using the puff pastry trimmings, create a bow or other decorations (this is optional). Brush the rest of the puff pastry with egg wash.
  • Bake for 25 minutes or until the pastry is golden brown. Let stand for 15 minutes before serving. Serve with whatever else you want: crackers, fruit, bread, meats, nuts etc. Enjoy!
