Cook bacon until crispy. Render fat but leave a coating on the bottom of the pan. In same pan, add toast and cook about 2-3 min per side. If you prefer to not cook in bacon fat, you could do olive oil instead.
Spread farmers cheese on toast. Thinly slice avocado and add to toast. Roughly chop bacon and add to the top. Season with flaky sea salt and pepper. Enjoy!
