Avocado and Cottage Cheese Toast with a Chili Crisp Poached Egg

Ingredients

  • Breakstone Cottage Cheese
  • Bread of choice this is sourdough
  • Avocado
  • 1 egg
  • Chili crisp
  • Olive oil
  • Salt
  • Pepper

Instructions 

  • Bring a medium pot of water to a boil. Using a spoon, stir water into a tornado and drop your egg in carefully. I sometimes will crack my egg into a small bowl first so it goes in more smoothly. Stir and let it come back to a boil. Remove egg with a slotted spoon about 2-3 min (depending on how cooked you want your egg).
  • Coat bread with olive oil and cook in a skillet for 2-3 min per side on medium heat. Add cottage cheese to toast and top with sliced avocado, poached egg and a drizzle of chili crisp. Season with salt and pepper and enjoy!
