Carmelized Onion and Goat Cheese Sandwich with sautéed Baby Portobello

Here is a caramelized onion and goat cheese sandwich with sautéed baby portobellos.  A super easy sandwich and tons of flavor and perfect for lunch.

Here’s how to make it:

Ingredients

  • Your fave bread (this is a sourdough)
  • Goat cheese
  • A splash of red wine
  • A few sprigs of thyme
  • Caramelized onions
  • Salt/pepper
  • Arugula
  • Portobello mushrooms

Instructions

  • Heat butter in a small pan and slice mushrooms.Add to pan along with thyme and some salt and pepper and once pan is hot, add red wine and cook down until mushrooms are cooked and wine is reduced. Remove from pan.
  • Add oil to pan and toast bread about 2-3 min per side on medium heat.
  • Spread goat cheese on your bread, then add mushrooms, arugula and caramelized onions (see other post for recipe for those). Top with a little more thyme, salt, pepper and assemble your sandwich.Enjoy!
